Making Rogan Josh at Home


Rogan Josh is a popular Kashmiri dish that is made with lamb or goat meat, flavored with aromatic spices and cooked in a rich tomato-based sauce. Here's a recipe to make Rogan Josh at home:

 Ingredients: 

1 kg lamb or goat meat, cut into small pieces 

3 tbsp ghee or vegetable oil 

2 onions, finely chopped

4 garlic cloves, minced 

1-inch piece of ginger, grated 

2 green cardamom pods 

2 black cardamom pods 

2 cinnamon sticks 

6 cloves 1 tsp cumin seeds 

1 tsp coriander seeds 

1 tsp fennel seeds 

2 tsp Kashmiri red chili powder 

1 tsp turmeric powder 

1 tsp garam masala powder 

2 cups water 

1 cup tomato puree 

Salt, to taste 

Instructions: 

1. In a large pot or Dutch oven, heat ghee or oil over medium heat. Add chopped onions and sauté until they turn golden brown.

2. Add minced garlic and grated ginger and sauté for 1-2 minutes. 

3. Add green and black cardamom pods, cinnamon sticks, cloves, cumin seeds, coriander seeds, and fennel seeds. Fry for a minute or until the spices release their aroma. 

4. Add the lamb or goat meat and cook on high heat for 5-6 minutes, stirring occasionally. 

5. Add Kashmiri red chili powder, turmeric powder, and salt. Mix well and cook for 2-3 minutes.

6. Add water and tomato puree, mix well, and bring to a boil. 

7. Reduce heat to low, cover the pot, and simmer for 1-2 hours or until the meat is tender and the sauce has thickened. You can add more water if required. 

8. Once the meat is cooked, add garam masala powder and mix well.

9. Garnish with fresh coriander leaves and serve hot with steamed rice or naan.

Making Kurma At Home

 Kurma is a flavorful and creamy Indian curry made with vegetables or meat and a blend of spices. Here's a simple recipe for making kurma at home:

Ingredients:

  • 1 lb boneless chicken or vegetables of your choice
  • 1 onion, finely chopped
  • 2 tomatoes, chopped
  • 2 cloves garlic, minced
  • 1 inch ginger, minced
  • 1 green chili, minced
  • 2 tablespoons oil
  • 1 teaspoon cumin seeds
  • 2 cardamom pods
  • 1 cinnamon stick
  • 2 cloves
  • 2 bay leaves
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1 teaspoon cumin powder
  • 1 teaspoon garam masala
  • 1/2 cup thick coconut milk
  • Salt, to taste
  • Fresh cilantro, for garnish

Instructions:

  1. Heat oil in a pan over medium heat. Add cumin seeds and let them sizzle.
  2. Add the chopped onions and cook until they are golden brown.
  3. Add the minced garlic, ginger, and green chili and cook for a minute.
  4. Add the chopped tomatoes and cook until they are soft and mushy.
  5. Add the chicken (or vegetables) and cook until they are browned.
  6. Add the cardamom, cinnamon, cloves, bay leaves, turmeric powder, coriander powder, cumin powder, and garam masala. Cook for a minute.
  7. Add 1 cup of water and bring to a boil. Reduce the heat and let it simmer for 10-15 minutes or until the chicken (or vegetables) is cooked through.
  8. Add the coconut milk and let it simmer for 2-3 minutes.
  9. Season with salt to taste.
  10. Serve hot, garnished with fresh cilantro.

This recipe makes about 4 servings. You can adjust the spices and seasoning to taste, and add more or less coconut milk depending on the desired consistency of the kurma.

You can also try adding some of the following ingredients to this basic kurma recipe to make it more flavorful and nutritious:


Vegetables: You can add a variety of vegetables to your kurma, such as carrots, potatoes, green beans, peas, etc. to make it more nutritious and filling.


Spices: To add more depth to the flavor, you can try adding some whole spices like mace, nutmeg, star anise, or black peppercorns.


Cream: To make the kurma creamier and richer, you can add a tablespoon or two of heavy cream or cashew cream towards the end of cooking.

Nuts and Seeds: To add crunch and richness, you can add some chopped almonds, cashews, or roasted pumpkin seeds on top of the kurma just before serving.
